10ounces(283 grams) sweet cookies((mixture of crunchy amaretti cookies, plain sweet cookies, digestive biscuits or vanilla wafers ))
4ounces(1 stick or 113 grams) unsalted butter(softened)
1cup(110 grams) powdered (icing) sugar(sieved)
½cup(35 grams) cocoa powder
⅓cup(80ml) sweet marsala wine(or milk )
⅓cup(30 grams) chopped toasted almonds
Instructions
Chop the chocolate and place it into a heat-proof bowl over a saucepan of barely simmering water. The water shouldn't touch the bowl. Stir the chocolate now and then until completely melted. Remove the bowl and set the melted chocolate aside.
Break the cookies roughly with your hands. Don't use a blender or the cookies will be too fine. Set the broken cookies aside.
In a large mixing bowl, use a wooden spoon to beat the soft butter and powdered sugar until creamy and well blended.
Slowly beat in the cocoa powder and sweet marsala wine.
Stir in the now slightly cooled, melted chocolate until completely incorporated.
Add the crumbled cookies and chopped nuts, stirring until everything is amalgamated.
Stir wet ingredients into the dry ingredients.
Prepare two lengths of doubled plastic wrap.
Divide the mixture between the two sheets of plastic wrap and spread out into a line. Roll it up tightly into a log pressing to form the shape. Twist the end of the plastic to seal.
Place on a baking tray (so they keep their shape) and refrigerate for a few hours.
After 30 minutes, check if they are still keeping the shape. If not press into shape and retighten the twists on the ends.
Refrigerate for 3 hours or overnight.
Or freeze if you are keeping it for some time.
When you are ready to serve. Remove the wrapping. You can dust the salamis lightly with sifted powdered (icing) sugar to resemble the skin of the salami.
Slice and serve. Keep it chilled to retain the shape.
