Lemon and Ricotta Pasta is a simple spaghetti dish made with a ricotta sauce flavored with lemon zest and Parmigiano Reggiano cheese. This is an ideal weeknight family dinner!
⅔cup(65 grams) finely grated Parmigiano Reggiano cheese(plus extra for serving)
Finely grated zest of one large lemon(See Note 2)
1teaspoonsalt(or to taste)
¼teaspoonfreshly ground black pepper(plus extra for serving)
Instructions
Bring a large saucepan of water to the boil. Add a generous amount of salt and cook the spaghetti until al dente or according to the package instructions.
Meanwhile, place the ricotta cheese in a bowl large enough to hold all the pasta and mash it with the back of a spoon until smooth.
Stir in the Parmigiano Reggiano cheese and almost all of the grated lemon zest, reserving a little for serving. Season with salt and pepper to taste.
Add ¼ cup of the pasta water and mix to combine. Add more pasta water as needed to create a soft, creamy consistency. Depending on the ricotta, this could take up to 1 cup of water.
Before draining the spaghetti, reserve 1 cup of the pasta water. Drain the spaghetti and add it to the bowl with the sauce.
Toss well to combine, adding more reserved pasta water if needed to loosen the sauce and help it coat the pasta. The heat from the spaghetti will warm the sauce.
For a warmer, creamier sauce, set the bowl over the saucepan of simmering water and toss briefly until silky. Alternatively, return the pasta and sauce to the empty saucepan and stir over low heat for a few seconds. Do not overheat.
Serve with the reserved lemon zest and freshly ground black pepper sprinkled over each plate.
Notes
This quantity makes a lot of sauce. You can use less if you prefer.
I use the lemons from my backyard lemon tree, which are quite large. If you are using grocery store lemons, increase the quantity to two for extra lemony flavor!
Tips for Success
All the quantities for this recipe are quite loose and can be changed to your liking.
Use whole milk ricotta cheese for the best flavor and texture. If liquid has collected on top, spoon it off before using.
Reserve extra pasta cooking water. You may need more than expected to loosen the sauce.
Don’t rinse the pasta after cooking. The starch helps the sauce coat the spaghetti.
Toss the spaghetti with the ricotta mixture while still hot to warm the sauce and help it combine smoothly.
Add the pasta water a little at a time. Wetter ricotta will need less water.
Season well with freshly ground black pepper. Ricotta has a mild flavor and needs good seasoning.
Serve immediately. If the sauce thickens, stir in a splash of hot pasta water before serving.
